Superb Keto Toffee
Four ingredients, ten minutes, virtually zero sugar. A proper sweet treat that won’t kick you out of ketosis — this one disappears fast in my house.
The hardest part of low-carb living isn’t the meals — it’s the moment you fancy something sweet. This toffee solves it.
Most “keto desserts” are either a chemistry experiment with fifteen ingredients or a disappointment. This one is neither. It’s browned butter and a couple of clever sweeteners, and it tastes like the real thing — rich, buttery, properly indulgent.

Ingredients
- 125g butter — half a block of Kerrygold unsalted
- 2 cups powdered erythritol — use proper measuring cups
- 1 tsp vanilla essence
- ½ tsp stevia extract powder — optional if you can’t get it, but it rounds out the sweetness
The Method
- Brown the butter. Melt it on a gentle simmer until it just starts turning golden brown — this is where all the toffee flavour comes from, so don’t rush it (and don’t let it burn).
- Add the sweet stuff. Stir in the erythritol, vanilla and stevia.
- Keep stirring for about 3 minutes until it comes together into a smooth paste.
- Set it. Spoon onto non-stick baking paper and chill in the fridge or freezer for 5 minutes. Break into pieces and try not to eat it all at once.
